Rack of Lamb- with warm fig jam glaze

Preheat oven to 400 degrees
The rack of lamb with fig jam is a delightful combination of savory and sweet flavors. The juicy and tender lamb pairs perfectly with the rich and fruity fig jam. It's an elegant dish that is sure to impress your guests or make any dinner special. These also make a great passed appetizer!

Ingredients
  

For the Lamb

  • 2 racks of Australian lamb (about 1 ½ pounds each), frenched
  • Pink salt and pepper, to taste
  • 2 tablespoons olive oil

For the Glaze

  • 1 jar fig jam
  • 4 Tbsp water

Instructions
 

  • Preheat your oven to 400 degrees. Season the racks of lamb with salt and pepper on all sides. Place the racks of lamb, fat side up, on a sheet pan. After Roast the racks of lamb in the preheated oven for about 10 minutes, flip it over and bake for another 10 minutes, then flip it again for 5 minutes for medium-rare, or until the internal temperature reaches around 130 degrees. Adjust the cooking time based on your desired level of doneness.
  • Once cooked to your liking, remove the racks of lamb from the oven and let them rest for about 5-10 minutes. This resting period allows the juices to redistribute and ensures a tender and juicy result. Slice the racks of lamb into individual chops. Place the jam and water in a small saucepan bring to a boil and turn off the heat. Dip each chop in the jam mixture and place on top of mashed potatoes, gratin of potatoes, black rice with veggies, or just a side of your favorite salad.
