Bambu’s Mac n’ Cheese -with Parmesan Garlic Butter, Swiss, Drunken Goat, Brie, White Cheddar and Gouda Cheeses
This cheesy, elegant mac n’ cheese was my best- selling pasta at my restaurant, Bambu, Malibu. People would come far and wide just for this succulent dish. Who doesn’t like mac n’ cheese? If you’re vegan, sub the dairy for plant-based options. Vio Life is a great melting cheese and use So Delicious original unsweetened coconut creamer.
Serves 8-10
Preheat oven to 375 degrees

Ingredients
  

  • 1 lb. gluten free macaroni (Manini’s brand you can find online or specialty store)
  • 3 tbsp Parmesan Roasted Garlic Black Pepper(recipe in the butter section)
  • 3⁄4 cups heavy cream
  • 1⁄2 cup half and half
  • 2 cups grated Gouda cheese, divided
  • 3⁄4 cup brie cheese, skin removed and sliced
  • 2 cups grated Swiss cheese, divided
  • 2 cups white cheddar cheese, divided
  • 2 cups freshly grated Drunken Goat Cheese, divided
  • 1 tsp pink salt
  • 1⁄2-1 tsp chili flakes
  • 1⁄2 tsp black pepper

Instructions
 

  • Preheat oven to 375 degrees and lightly grease a 9 x 13pretty ovenproof baking dish rubbed with some plain butter and set aside. Bring a large pot of water to a boil with 2 teaspoons of pink salt. Add the pasta and cook to package directions. Drain and drizzle with a little bit of olive oil to keep from sticking together. Toss the prepared cheeses as instructed in the ingredients together and set aside, reserving 2 cups for the top. Pour the cream and half and half in the same pot you cooked your pasta in and bring to a boil for 2 minutes. Turn off the heat and add the cheeses, Parmesan Butter, salt and pepper, to taste.
  • Pour the pasta into the cheese sauce, stirring just to combined, until the cheese is melted. Pour the mixture into the prepared baking dish and sprinkle the reserved cheeses on top. Bake for 20 minutes, or until cheesy is bubbly and the top light golden brown. Save any cheese leftover for quesadillas or your favorite cheesy dish another day. To serve, place in a bowl, or serve as a side dish with your favorite chicken dish.
