Healthy Pecan Fig Bars

You’ll Need an 8x8 pan
Makes 6 bars  
Bake at 350 degrees for 20-25 minutes, or until golden brown
 
These are amazing- way better than the store bought brand- and easy to make. This takes me back to childhood, in a very good way. Use organic ingredients always.

Ingredients
  

Crust

  • 1 ¼ cup gluten free flour, I likeBob’s Red Mill 1 to 1 baking flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 6 tablespoons organic unsalted butter
  • ¾ cups packed organic light brownsugar
  • 1 large organic egg
  • 2 teaspoons vanilla extract
  • ½ cup coarsely ground organic pecans

Mix altogether at the same time in a stand mixer. Remove and separate into 2 portions forming balls. Set aside.

Fig Filling

  • 2 cups chopped dried figs, soaked for10 minutes and drained
  • 2 tbsp. organic brown sugar
  • ¼ cup organic apple juice
  • 1 tsp. organic orange juice
  • 1 tsp. organic lemon juice

Instructions
 

  • 1.     After soaking and pureeing, add this in a bowl mixing the remaining ingredients.
    2.     Preheatoven to 350 degrees.
    3.     Usingbutter, lightly grease an 8 x 8 baking pan. 
    4.     Using half the crust mix, press down on the bottom of the pan.
    5.     Fill with the fig mix evenly.
    6.     Cover the top with remaining crust mix, pressing down into the figs gently.
    7.     Bake for20-25 minutes until golden brown.
    8.     Cool before cutting.
