Coconut Lime Cream Pie
Coconut Lime Cream Pie:
This delightful pie combines the tropical flavors of coconut with the refreshing tang of lime, creating a perfect balance of sweetness and citrus.
Ingredients
- 1 pre-baked GF pie crust (9-inch)- or regular buy Wholly Wholesome Pie crusts or make your own
- 1 cup unsweetened shredded coconut
- 1 ½ cups granulated sugar
- ⅓ cup cornstarch
- ¼ teaspoon salt
- 1 ½ cups water
- 4 large egg yolks
- ⅓ cup fresh lime juice
- 2 tablespoons unsalted butter
- 1 teaspoon lime zest
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Additional shredded coconut for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Spread the shredded coconut evenly on a baking sheet and toast it in the oven for about 5-7 minutes until golden brown. Set aside to cool.
- In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt. Gradually whisk in the water until the mixture is smooth. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.
- In a separate bowl, whisk the egg yolks. Gradually whisk in about ½ cup of the hot sugar mixture to temper the eggs. Then, pour the egg mixture back into the saucepan, whisking constantly. Cook for an additional 2 minutes, stirring continuously.
- Remove the saucepan from the heat and stir in the lime juice, butter, and lime zest until well combined. Let the mixture cool for a few minutes, then pour it into the pre-baked pie crust. Smooth the top with a spatula.
- Cover the pie with plastic wrap, ensuring the plastic wrap touches the surface of the filling to prevent a skin from forming. Refrigerate the pie for at least 4 hours or until set
- In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form. Spread or pipe the whipped cream over the chilled pie filling.
- Sprinkle the toasted shredded coconut over the whipped cream as a garnish. You can also add additional lime zest or a few lime slices for extra decoration, if desired.
- Slice and serve!
