Peel the butternut squash, remove the seeds, and cut it into1-inch cubes, or buy the squash cut up and cut into 1/2 inch squares. Rinse the quinoa under cold water until the water runs clear. Bring the quinoa and 2 cups of water to a boil in a saucepan. Reduce heat to low, cover, and simmer for 15minutes, or until all the water is absorbed and the quinoa is fluffy.
