In a mixing bowl, combine the diced tomatoes, minced garlic, chopped cilantro leaves, pumpkin seed oil, salt, lime juice and cayenne pepper. Mix well. Let in marinated for at least 2 hours, then drain. Spoon the tomato mixture onto each toast. Serve the bruschetta immediately as an appetizer or snack. You can make these about a ½ an hour or an hour before if serving at a dinner party. Enjoy your homemade bruschetta!
