Fava Bean, Bacon, and Potato Pasta

This is one of my favorites as I love bacon on just about everything. Fresh Fava Beans are available from late March to early May. If you can’t find them or can’t wait to make this, use canned Butter Beans by Eden brand. They are very good, just not green.
Serves 4 – 6

Ingredients
  

  • ¾pd. angel hair pasta, cooked to package directions
  • 2 Tbsp sunflower oil
  • 2 Tbsp Piccata Butter (recipe in butter section)
  • 1 medium potato, baked, peeled, and diced into ½ inch pieces
  • 2 shallots, thinly sliced
  • 1 cup fresh fava beans (about 30 large pods) removed from the pod, or buy 1 can of Eden Brand Butter Beans, drained, and rinsed
  • 1 ½cups baby spinach
  • Pink salt and black pepper, to taste
  • ¼ - ½ teaspoon chili flake, or more according to your taste

Garnish

  • 8 slices bacon, chopped and cooked, for the top of the pasta

Instructions
 

  • Cook the chopped bacon until crispy and set aside. Prepare the fava beans. Take the beans out of the pods. Try to get big pods with big beans inside. In salted boiling water, add the beans and boil for about 1 ½ minutes. Drain and rinse under cold water. On the thick side of the bean, pinch the skin open and squeeze the bean out and set aside. (If you’re using canned Eden Brand Butter Beans, drain well and rinse them before sautéing). Cook the pasta according to package directions, then drain and toss with 1 tablespoon of the sunflower oil to prevent them from sticking together and set aside.
  • Heat the 2 tablespoons oil on high heat. When the oil is hot, add the shallots, caramelizing them, about 5 minutes stirring often. Add the potatoes and sauté until the potatoes are lightly browned. Add the fava beans and spinach, cooking for 2 minutes. Add the 2 tablespoons Piccata Butter, adding the angel hair, tossing until the butter is incorporated and the vegetables are evenly distributed. Season with salt and black pepper to taste and the chili flakes, if desired. To serve, place the pasta mix in the center of a bowl or plate and top with cooked bacon and more chili flakes, if desired.
