Baked Halibut

Ingredients
- 4 (6-7 oz.) pieces Alaskan Halibut
- Pink salt and black pepper, to taste
- 3 Tbsp chopped fresh cilantro
- Cilantro Chili Butter- (recipe follows)
- Mango Salsa- (recipe follows)
Cilantro Chili Butter
- ¼ pd. grass-fed organic butter, softened
- 1 Tbsp finely chopped cilantro
- ½ -1 tsp chili flakes, depends on how hot you like food
- Pink salt and black pepper to taste
- Deli sheets, brown
- In a small bowl, mix all the ingredients together well. On 2 pieces of brown deli sheets, place the butter. Using the deli sheets, make a log and roll. Or put in smaller bowl and set aside until ready to use. If you’re making this a day ahead, it’s best to use and store with deli paper.
Mango Avocado Salsa
- 1 ripe mango, diced small
- 1 semi soft avocado, small dice
- ¼ cup chopped cilantro
- 1 tsp minced red onion
- Pink Salt and black pepper, to taste
- 2 Tbsp lime juice
- 1 Tbsp seasoned rice vinegar
- 1 tsp olive oil
In a small bowl, mix all ingredients together.
Instructions
- On a sheet pan, drizzle a little olive oil and spread out. Place the halibut on top. Top with 2 pats of the butter and the chopped cilantro on top of the halibut filets. Bake for 10-15 minutes, depending on how thick they are. Do not overbake. Place on a platter for family style or serve individually. Top with the salsa and if you like, serve with a salad, veggies and or potatoes or rice.
