Baked Halibut with baby tomatoes and basil

Serves 4 People
This also makes a great buffet item. Serve them like in the photo with sides of your choice.


  • 4 halibut fillets (about 6 ounces each)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons minced red onion
  • 1 pint baby tomatoes, cut in half
  • 1/4 cup fresh basil leaves, julienne
  • 1 lemon, zested and juiced


  • Preheat your oven to 400 degrees. Season both sides of the halibut fillets with salt and pepper. Place the halibut filets on a sheet pan and spread with 1 tablespoon of olive oil. Top with the sliced baby tomatoes and sprinkle the basil leaves, lemon zest, remaining olive oil and lemon juice over the halibut and tomatoes. Bake for 10-15 minutes, depending on how think your pieces are, or until the halibut is cooked through and flakes easily with a fork.
